Lemongrass “Beef” Spring Rolls

With our thanks to Plant Crush for this recipe.

Ingredients:

  • One small onion, diced
  • 1/2 cup minced lemongrass
  • Two teaspoons neutral oil, such as grapeseed or avocado
  • 1 cup vegetable broth
  • Two bags of It’s Jerky Y’all’s jerky (Prickly Pear Teriyaki flavor)
  • Rice paper wrappers (found at the Asian market)
  • A wide bowl of warm water
  • Two medium Persian cucumbers, cut into long sticks
  • 5 oz box of any kind of mixed baby greens, or romaine lettuce
  • 1/2 a head of purple cabbage, shredded
  • Mint and basil leaves washed and drained
  • Five spice peanut sauce, for serving (can also use vegan fish dipping sauce, AKA nước mắm chấm chay)

Directions:

  1. In a medium saucepan on high heat, saute the onion and lemongrass in the oil until fragrant.
  2. Add the jerky and vegetable broth to the pan, tossing to coat.
  3. Turn the heat to low-medium, cover the pan, and let the jerky simmer in the broth until it has soaked up the liquid completely. Turn the stove off and set the jerky aside to use in the assembly of the spring rolls.
  4. To assemble the rolls, gather all the ingredients, have the warm water bowl nearby, and a flat rolling surface (a big plate or a wooden cutting board works). Check out the video (above) for a visual guide if needed. Dip a rice paper wrapper into the bowl of water, rotating the whole wrapper once, to ensure the wrapper is moist all around. Lay the wrapper flat on a plate or cutting board. Arrange the fillings on the wrapper: greens, veggies, cucumbers, herbs to your taste, and a few pieces of lemongrass jerky. Tuck and roll, and repeat!

Cutting out the Middle-Critter

Howdy,

After becoming a puppy parent, my heart grew like the Grinch’s. Then I found out they still eat dogs in 11 countries and saw photos of dogs in crates much like those housing chickens here in the US. I was livid and ready to start causing harm to people who would do that. I soon thereafter noticed my dog’s hind legs were much like a pig’s and then learned about how pigs will behave like a dog if you raise them that way … and then I realized all sentient animals are aware — oh shit.

I could no longer consume meat without thinking of how the animal lived and died, and then a trip to the zoo brought about a clarity I had never had before, and that was I could no longer eat animals. This was almost three years ago, and over time I realized all I wanted to do was to give the cows in Texas a break.

One of my state’s largest contributions to America’s and the world’s stomachs is beef. Rather than just complain I decided to change how it is and so I am. After just over a years’ worth of learning and developing the marketing and flavors, we launched It’s Jerky Y’all into a $3 billion industry.

Welcome, All Y’alls Foods, a Texas plant-based snack foods company set about to change what makes the very best jerky with our premier product It’s Jerky Y’all! We take traditional animal-involved snacks and make them tastier and from plants, cutting out the middle-critter.

We released three flavors May 21st and have four more in the works with each flavor representing a region in Texas and as the prickly pear is our state plant we use it, as we do the chipotle and pecan smoke — the state tree.

One of the reasons we exist is to support Rowdy Girl Sanctuary so a portion of each and every bag sold goes to Rowdy Girl Sanctuary in Angleton, Texas.

Thank you,
Brett

Why Soy?

Doesn’t Soy Promote Cancer?

I will not be speaking about GMO soy other than to say I would never promote its use. Study after study shows a reduction in Ovarian, Breast and Prostate Cancers by soy consumers. The notion that plant-based phytoestrogen can disrupt human based estrogen is not true. For thousands of years, Soy has been a staple in some of the countries with low cancer rates throughout Asia. If you pour over the studies and you can verify who paid for them, then you too might question intent.

Is Soy Filled with Estrogen?

Soy contains no estrogen whatsoever, not a drop, but cow’s milk certainly does. In fact, most folk’s intake of cow’s milk contributes to 80% of their Estrogen intake! Soy milk has the same protein content as cow’s milk but 60% less saturated fat and triple the magnesium. Soy contains phytoestrogens which are plant hormones and may bring about lower rates of cancer by blocking the actual estrogen. Phytoestrogens are also found in things like carrots, apples, and even beer.

The Truth about Hexane and Soyfoods

Known as a neurotoxin and air pollutant Hexane is used to strip soy of its oil and separate the protein creating protein isolates but the FDA does Not require any manufacturer who uses it to test for residue on the foodstuff it is used in.

The Truth about the Soy we Use!

At All Y’alls Foods, we use only the whole Non-GMO Soybean, so it comes complete with 36% protein, 19% Fiber, 19% oil, 13% moisture, 9% soluble carbohydrate, and 4% minerals. The beans are grown under contract as a no-spray crop, so the soy is as clean as can be. It is then crushed and cooked and after much love, and attention is reborn as Jerky!

From Studies through Logic and all the way to Fact

When I first published my book Nutritional Truths I was still misinformed on the facts on soy and how it is an extremely nourishing food source, based on results over thousands of years.

Be well and Jerky on Y’all!

Here is a website that covers the whole soy story very well: http://www.whfoods.com/genpage.php?tname=foodspice&dbid=79

It’s Jerky Y’all: Is the title sponsor for Rowdy Girl Sanctuary’s Vegan May Fest with Speaker Jane Velez-Mitchell

Vegan May Fest

From producing our product to giving back, kindness is the way It’s Jerky Y’all operates

May 4, 2018

Plant-based jerky brand It’s Jerky Y’all is the title sponsor for Rowdy Girl Sanctuary’s Vegan May Fest coming up on May 19, 2018, in Angleton, Texas. A day filled with vegan education, entertainment, food, and more, the event will feature keynote speakers Jane Velez-Mitchell, as well as Rowdy Girl Sanctuary Founder Renee King-Sonnen and husband Tommy and It’s Jerky Y’all spokesperson Kat Mendenhall.

“I’m just happy as I know how to be that Rowdy Girl Sanctuary is on the receiving end of such a passionate organization as All Y’alls Foods and their It’s Jerky Y’all.” Said Renee King-Sonnen “We’ve all been very excited as the launch of the company got closer and closer. And now, here it is! Partnering with “It’s Jerky Y’all” is the perfect fit because we used to raise livestock and sell them at auction, now we can enjoy the jerky without the cow!”

It’s Jerky Y’all got started when Native Texan Brett learned that beef was his great state’s most significant contribution to America’s stomachs. He set out to shift habits with a tastier, tender, 100% plant-based jerky made with zero animal involvement. Why plant-based jerky? Because plants deliver more protein with less impact on people, animals, and the planet. “The jerky business is a nearly 3 billion dollar industry — I thought it could use some kinder options,” Brett says. A portion of every sale goes to support Rowdy Girl Sanctuary.

“As a Texas vegan activist, it’s an honor to be a keynote speaker at the upcoming Vegan May Fest, May 19th at Rowdy Girl Sanctuary.” shares purveyor of vegan goods Kat Mendenhall. “There’s nothing more important to me than raising awareness and inspiring animal advocacy in my beloved Lone Star state. Built on trailblazers, Texas may be known as cattle country, but some savvy vegans are changing that perception like All Y’alls Foods. I’m thrilled for the opportunity to introduce them at May Fest as their official spokesperson. Texas is going vegan y’all!”

Most of all, Brett enjoys helping people understand they don’t need a cow to satisfy their craving for great jerky. All the protein in beef comes from the plant’s cows eat. “We cut out the middle critter because it’s better for every body,” he quips. “Head to Rowdy Girl Sanctuary’s Vegan May Fest to try our first 3 Texas-inspired It’s Jerky Y’all flavors: Black Pepper & Sea Salt, Prickly Pear Teriyaki, and Prickly Pear Chipotle.” It’s Jerky Y’all is proud to be a GO-TEXAN product, a program that celebrates Lone Star pride.

It’s Jerky Y’all is a certified non-GMO whole soybean product that is also Kosher and gluten-free and made in a level two certified Gluten Free & Kosher facility. Soy delivers ALL nine amino acids people need plus fiber, vitamins, minerals, antioxidants, and phytochemicals. Plant-based snacks help people skip saturated fats, cholesterol, hormones, antibiotics, or other issues associated with animal protein.

Black Pepper & Sea Salt: classic savory flavors inspired by the gulf coast of Texas

It’s Jerky Y’all: An Introduction

The mission of All Y’alls Foods is to offer more enjoyable plant-based snack food options that traditionally involved animals. Our story begins with my love of tasty jerky and closes with the delivery due date for our premier product It’s Jerky Y’all!

Growing up in Texas we almost always had jerky around keeping us company in a deer blind or on the water first thing in the morning. On Boy Scout camping trips in the Rockies while hiking or hanging around the campfire at night. My favorite has always been black pepper.

As I aged the clamp down and tear tough jerky no longer appealed to me while the hamburger style strips or greasy sticks were no more appealing. Eventually, I found a bit more tender jerky and enjoyed it until I decided a couple of years ago to never eat beef again. Having learned about our diets direct impact on our state of health including via my studies at IIN (Institute for Integrative Nutrition), I wanted to support wellness for folks and the critters too by serving plant-based foods.

I opened Farmacy Fountain in 2013, which was a Raw-vegan, organic juice and smoothie bar in a classic 1930’s soda fountain. I also made a myriad of items in the dehydrator including my famous kale chips and macaroons. The Fountain was ahead of its time and is now a great memory and was a start.

At that same time I was introduced to several styles of plant-based jerky, and while I enjoyed many of them, I did not find one with the texture and flavor I wanted. Then I began making my own and after countless batches arrived at the first three flavors of It’s Jerky Y’all, while the next four are in the works.

After working with various plant options, I landed on the best one as it is made from whole soybeans, not just parts of them and it is also non-GMO. All Y’alls Foods is grateful to present the flavors of the Lone Star State in a way that helps to begin to redefine a Texas tradition-Jerky.

We are also proud Go Texan Members and appreciate the Texas Department of Agriculture for its growing support of the program. www.gotexan.org

Soon enough you can try It’s Jerky Y’all and taste what all the fuss is about. Springtime 2018 is about to get a whole lot tastier with It’s Jerky Y’all hitting Amazon and other shelves May 21st. Retailers may contact us directly or through RangeMe. Welcome to the future of jerky Y’all! www.itsjerkyyall.com
